Coconut and Almond Mousse

Ingredients:

  • 150 g coconut milk (at least 60% coconut)
  • 30 g sugar
  • 400 g silken tofu
  • 150 g cocoa butter
  • 50 g cream
  • 100 g almonds

Instructions:

  1. Melt the cocoa butter in the coconut milk.
  2. Add the sugar and mix well.
  3. Put all the ingredients into a Vitamix and blend until smooth.
  4. Let it rest in the fridge for 2-3 hours before serving.
